After years in Seattle, this beautiful mountain community beckoned us east where at the foot of Mt. Mansfield in Stowe, VT, we became innkeepers and raised our sons.
The Inn provided the opportunity to not only ‘visit with the world’ while earning a living, but also sparked my interest in creating delicious food for people hungry with adventure.
Our guests centered their explorations in our ‘backyard’ – running the trails in the cross country center, hiking the mountain, reading under the trees at the river’s edge, paddling the reservoir, fishing our stream, touring all the covered bridges, and swimming in our cool, deep swimming hole. It wasn’t long before our adventurous guests wanted ‘to-go bags’ for their daily escapades and trips back home.
As happens with spending time in the fresh air, it feeds one’s soul. A few of those days and my Fresh Mountain Breakfast recipe was perfected.
